Chicken livers, ground pork and giblets give Dirty Rice, a legendary Cajun dish, its name. But this tasty crowd-pleaser, which turns up at just about every family event in the Cajun Country of Louisiana and Mississippi, is anything but drab.
No two recipes are the same, and every family prepares its dirty rice differently, adding or subtracting favorite ingredients to enhance and deepen the flavors. Have a taste on Fat Tuesday, Feb. 12.
